Black bean and sweet potatoe mush

This is a recipe I used to make for pretty much every trip when I didn't own a stove yet (and didn't want to deal with organizing meals with others). It's not the lightest meal but it is filling!

Ingredients

  • 1-2 Sweet potatoes
  • Can of black beans
  • Olive oil
  • Salt
  • Pepper
  • (Dried rosemary)

Instructions

Heat your oven to ~190 degrees Celsius (375 degrees Fahrenheit). Chop up the potatoes into smaller pieces and toss in a bowl with olive oil, salt, pepper, and rosemary. Put mixture on cookie tray or anything that can go in the oven and bake until the potatoe is soft when you prick it with a fork, probably about 30 mins. Take it out of the oven and mix in a drained can of black beans. Done! Now you can bring it in a large ziplock bag or container and eat it in wraps or just as it is.
