Vegan Non-Perishable French Toast

Fun hut breakfast that's super easy to make and doesn't involve anything that requires refrigeration.

Ingredients

For 12 slices:

  • 12 thick slices slightly stale bread
  • Two bananas
  • One 400ml can coconut milk (Can experiment with powdered coconut mil as well)
  • 2 Tbsp Maple syrup (plus more to serve)
  • 2 tsp. Cinnamon
  • Fruit or other toppings to serve
  • Oil or butter

Directions

In bowl, mash the banana until smooth. Add the coconut milk, maple syrup and cinnamon and whisk until well combined. Heat the oil on a pan until hot, then dip both sides of the bread in the banana coconut milk mixture (just dip, don't soak!) and cook until browned on both sides. Serve with maple syrup and toppings as desired.
